                                                                                          Warm up your winter nights with this Fragrant
                                                                                          Wintery Soup. A delightful blend of hearty
                                                                                          vegetables that will make you crave for more!
                                                                                          INGREDIENTS:
                                                                                          2 onions, sliced
                                                                                          2 tbsp oil
                                                                                          2 stalks celery, sliced
                                                                                          3 carrots, sliced
                                                                                          16 oz green cabbage, shredded
                                                                                          6 cloves garlic, minced
                                                                                          1 potato, cubed
                                                                                          1 28 oz can diced tomatoes,
                                                                                          undrained
                                                                                          1 15 oz can cannellini beans,
                                                                                          undrained
                                                                                          1 15 oz can garbanzo beans,
                                                                                          undrained
                                                                                          2 tbsp basil
                                                                                          1 1/4 tbsp salt
                                                                                          1 tbsp oregano
                                                                                          5 tbsp chicken consommé
                                                                                          4 oz baby spinach leaves

                                                                                          DIRECTIONS:
                                                                                          In an 8-quart pot sauté onions until
                                                                                          translucent.
                                                                                          Add the celery, carrots and cabbage.
                                                                                          Sauté for about 20 minutes or until soft,
                                                                                          stirring occasionally.
                                                                                          Stir garlic into the pot and sauté for 2
                                                                                          minutes.
                                                                                          Mix and add the rest of ingredients besides
                                                                                          the spinach.
                                                                                          Fill the pot with water.
                                                                                          Bring to a boil.
                                                                                          Let simmer for 1 1/2 hours and add the
                                                                                          spinach.
                                                                                          Cook for another 30 minutes on a low to
                                                                                          medium flame.
