                                                                                     Enjoy a crispy Melava Malka treat to finish up your
                                                                                     shabbos the perfect way.

                                                                                     INGREDIENTS:
                                                                                     2-3 baguettes, sliced diagonally

                                                                                     Cheese Mixture:
                                                                                     8 oz feta cheese, crumbled
                                                                                     4 oz cream cheese
                                                                                     1/3 c olive oil
                                                                                     2 tbsps lemon juice
                                                                                     1/4 tsp salt
                                                                                     1/8 tsp black pepper

                                                                                     Tomato Mixture:
                                                                                     3 tbsp olive oil
                                                                                     2-3 mini purple onions, sliced
                                                                                     2 lbs heirloom tomatoes, quartered
                                                                                     1/2 tsp salt
                                                                                     1/8 tsp black pepper
                                                                                     2 cloves garlic, minced

                                                                                     parsley flakes

                                                                                     DIRECTIONS:
                                                                                     Preheat the oven to 425 degrees.
                                                                                     Place the baguette slices onto a lined baking sheet.
                                                                                     Bake for 6-8 minutes, flipping once, until golden.
                                                                                     In a bowl, combine all the ingredients for the cheese mixture.
                                                                                     Using an immersion blender, blend until smooth.
                                                                                     In a frying pan, sauté the onions in oil for 2-3 minutes.
                                                                                     Add the rest of the tomato mixture ingredients and cook for 5
                                                                                     minutes.
                                                                                     To assemble, spread each slice with a generous amount of
                                                                                     cheese mixture.
                                                                                     Using a slotted spoon, place the tomatoes on top.
                                                                                     Sprinkle with parsley flakes.
