Pulled beef
pinwheel skewers
These flavorful pinwheels will be the hit whenever you make
them. It can be made ahead of time and freezes great.
INGREDIENTS:
Full sheet flaky dough 1 tsp soy sauce
1 tbsp lemon juice
Pulled beef: 2 tbsp apricot jam
2 lbs brisket (any cut) 1 tbsp honey
Pizza sauce:
Spice rub:
1 8 oz can tomato sauce
1 tbsp oil
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp garlic powder 1 tbsp sugar
1/3 tsp salt
1/4 tsp onion powder
1 tbsp oil
1/2 tbsp onion soup mix
1/4 tsp salt 1/4 tsp black pepper
Garlic mayo:
Brisket sauce: 8 tbsp mayonnaise
1/2 cup ketchup 2 garlic cloves, finely chopped
1/2 cup water 1 tsp olive oil
1 cube frozen garlic 1 tsp lemon juice
1 tbsp bbq sauce Salt and black pepper to taste
DIRECTIONS:
Preheat oven to 350.
Score the brisket diagonally on both sides.
In a small bowl mix all the spices and 1 tablespoon oil, and rub onto the brisket on both
sides. Lets sit for 20 minutes.
Put the brisket into a 9x13 pan.
In a small bowl whisk together brisket sauce ingredients. Pour over meat.
Cover and bake for 3.5 hours. Pull apart in the pan with two forks.
Defrost flaky dough fully. Divide in two and roll out thinly.
Spread the pizza sauce on top. Top with pulled beef. Roll up jelly roll style and make 1 inch
slices. Place on a lined cookie sheet.
Bake at 350 until golden for about 12-15 minutes.
While it’s baking, prepare the garlic Mayo. Combine all the ingredients very well. Drizzle
over pinwheels while hot.
