                                                                                         SPLIT PEA

                                                                                         SOUP


                                                                                         Warm up your taste buds and beat
                                                                                         the winter chill with this hearty veggie
                                                                                         split pea soup. This comforting soup is
                                                                                         the perfect way to nourish your body
                                                                                         during the cold winter days.


                                                                                         INGREDIENTS:
                                                                                         2 packs split pea mix
                                                                                         1 cup baby lima beans
                                                                                         2 tbsp salt
                                                                                         1  tbsp  mushroom consommé
                                                                                         1 turnip, diced
                                                                                         1 squash, unpeeled and diced
                                                                                         3 large carrots, sliced
                                                                                         3 celery, sliced
                                                                                         2 parsnip, diced


                                                                                         oil, for sautéing


                                                                                         DIRECTIONS:
                                                                                         Place split peas, lima beans, salt and
                                                                                         consommé in an 8-quart pot.
                                                                                         Fill the pot with water and bring to a boil.
                                                                                         Cook for 1 1/2 hours.
                                                                                         In the meantime, sauté all vegetables in
                                                                                         oil for about 20 minutes.
                                                                                         Pour into soup and cook for another hour.
